Ingredients

2 tbsp mild picante sauce
1 tbsp ketchup (adds a unique sweet-savory tang)
2 tbsp Queso (casio) sauce or crumbled Queso Fresco
Cooking Fat: 1 tsp butter or oil (only if the sausage is lean)
Instructions
Brown the Sausage: In a medium non-stick skillet over medium-high heat, add the Mexican sausage. Break it apart with a wooden spoon as it cooks until browned and crispy (about 5–7 minutes).
Sautรฉ the Veggies: Add the diced bell peppers and onions directly into the skillet with the sausage. Sautรฉ for about 3–5 minutes until the onions are translucent and the peppers are tender.
Scramble the Eggs: In a small bowl, whisk the 3 eggs until well combined. Lower the heat to medium and pour the eggs directly into the skillet with the sausage and veggies. Gently stir and fold the mixture until the eggs are set but still moist (about 2–3 minutes).
Incorporate the "Secret" Sauces: While the eggs are still in the pan, stir in the mild picante sauce and ketchup. This allows the flavors to meld and warms the sauces through.
